Hi, looking for a Gyutohiki or tall suji, measurements 270ish x 45ish. Don’t care about wa or yo handle or steel type just no shirogami please. Not really interested in the mass market sub-$100 stuff, so probably more the $150-$250 range, $300 cap unless it’s something special. Thanks for looking!
 
Matt is super easy to work with, I literally sent him a drawing of what I wanted and he basically matched it exactly. It should be coming soon, I'm salivating to use it

What is your experience with white paper steel that makes you disinclined here without also ruling out simpler carbon steels (O1, for example) or blue 1 (again, for example)? I'm honestly curious to learn. I have the White 2 WH gyuto and it definitely takes a patina quickly. But no signs of rust in swampy swampy Norfolk, VA.
