Hello KKF,

I can't remember when I got this knife, must've been at least 4 or 5 months ago. I remember using it once when I initially received it on an onion and carrot, since then it hasn't been touched (except for today for pictures). I have Two other knives from Joe, a custom slot with him, and am potentially in the midst of a trade fro another. Joe's work speaks for itself which is something anyone who's used it can and will attest to—as far I'm concerned, he's easily one of the top makers in the world.

I paid $600, asking $550 shipped.

If you're interested in trades, I'll entertain them but if someone coughs up the cash first, it's gone.

I know the dimensions are a bit smaller than most people go for but this is a steal. Great core steel, beautiful cladding, top notch timber, and full polish on natural stones. I’ve gravitated towards smaller knives because they end up being much more practical for simple prep items instead of grabbing a full size gyuto.

Joe’s work is at the top and someone needs to save me from buying this. Once the eggnog hits, all bets are off.

As a member of the KKF Enablement committee, I must continue. This is a *perfect* sized Sakai 210. Great dimensions, weight, steel and handle wood. As @enrico said, I've found this size to be a perfect fit to go along with a 240. I'd strongly suggest getting this knife to endgame at this size.

TL;DR: Just do it.
