Hi everyone, guess this is my introductory. I always loved cooking as a hobby and since I graduated last year I got disposable income and fell into this rabbit hole. After a year I decided that I need to pick up a few carbon knives and was told to come here. Forum/community looks great accompanied with so many listings that maybe coming here wasn't such a good idea. Hopefully I can also pick up some tips about polishing as well!
