Hi guys, I got this Heiji SS Sujihiki 300mm February, use once on the beef, after that stay in drawer until now.
I feel like too big when I try to remove silver skin from beef & lamb, But the length is very useful when I slicing roast beef. beside slicing roast beef, I think I prefer shorter size, I stick with my 240mm FKH Suji for silver skin I sharpen this once. There's some low spot & high spot I didn't remove.
