Hi, I have just joined and look forward to asking questions and eventually contribute in the future. I am a retired chef of 35 years and I am looking into starting a mobile sharpening business and need advice and any recommendations as I get this going. I have predominantly used Japanese knives (except using Wusthof through culinary school) so my background is mostly in sharpening these. I am looking to upping my knowledge on knives, their composition and edges as well as sharpening grits. I used stones up to 6000 on my own knives but looking at more of a machine setup like 1x30 belt sander or a Tormek T8. Any advice would be welcome as well as any direction to any videos or forums I should visit. Thanks for reading, I am excited to start this new chapter in my life....even if I'm getting on a bit
