I've been in professional kitchens for ~20 years, and consistently getting further and further into knives for the last 8ish years. My roll includes a Saji rainbow nakiri, a kikuichi Damascus petty, and until yesterday, a custom "big belly bunka" from Majime Knives(he's a bit unknown but makes fantastic things). My friend introduced me to this forum when I told him about my (heart)broken bunka. So I'm in the market for a new workhorse gyuto or similar to keep up with my daily routine. Nice to meet you all! Can't wait to see what I purchase from the classifieds
