I have been quietly reading posts for a couple of years. I have some very good entry level knives and I'm hoping to improve my sharpening abilities. Love the Misono 440 180 petty "slicer" and the Gesshin Stainless 210 Gyuto. A Suien VC 240 Gyuto is my big gyuto for big jobs!
I have one sharpening stone: the Shapton Ceramic 1500 - works for me.
