I have quite a bit and my answer will probably change week to week. Right now I am using makoto 240 gyuto from his sakura line although I havent had the chance to use it yet I have just recently purchased a tsukasa hinoura 210 gyuto. However at the moment I am on a chase for 2 knives a shig and a kyoshi kato gyuto
