Hi I'm Oscar. About to start working in Kitchens again and have no knives (Vintage french knives I own in storage in the UK hopefully not getting too rusty). In Sydney which looks to be a good spot for stores. Will be looking at some Gyuto's this week, including Konosuke GS, Kiaden AX and Yoshimi Kato.

Hoping not to get to addicted and just build and function kit. So looking forward to owning ten 240 Gyuto's by next year.

Yep live between there and Chef's Armoury. Have bought a Higonokami for Mushroom season from there. Beautiful store
