Welcome. What knives do you currently use?
Right now for work I only bring 3 knives which are Nenox Honesuki 150mm, konosuke hd2 Western gyuto 240mm, and Suisin inox honyaki 300mm. Mainly use the gyuto for prep and leave the other 2 knives on the cutting board during service.
