Thanks so much for everyone’s help (in other threads) in choosing my first traditional Japanese knife.

I finally pulled the trigger on a Kitaoka 270mm kiritsuke in white #1.

Interesting choice, I like it. Good on you for not going with the traditional gyuto that everyone else chooses.

That's a beautiful knife.
 
Nice choice! It'd be cool to hear of what you think of it in use.

(I don't know whether the vendor sold it at a working sharpness; if not, you might want to do an initial sharpening before using it, i.e. honbazuke).

Love it. The vendor did put a fine edge on it.

Now I need to learn the nuances of the “steering“ thing.
