SOLD Isamitsu AS 240mm Gyuto

Hi all, another knife needs to be released--
240x50 Stainless clad Aogami Super Gyuto
Heavier than it looks, and cuts extremely well. Nice forward balance, a bit in front of the pinch. Very thin BTE but the steel is excellent and doesn't feel delicate at all
Done a bit of work on it, shoulders eased, choil rounded
Has some stray scratches due to not being extra thorough going up the grits after easing the shoulders
Seen light home use, sharpened once after ^
Zebrawood handle, was a bit too porous for my liking and didn't love how it looked using mineral oil, so put a few coats of tru-oil on it (linseed/tung oil)- can be removed with paint thinner / sanded off if you don't like
Also, have seen a few Isamitsu AS gyutos where the profile is just one continuous curve the whole way. This gyuto has a decent flat spot in the back and then the curve is pretty mild (showing in picture).
