I have a beautiful JCK 240 Single Bevel Gyuto in Ginsan for sale.
Fun knife, with excellent F&F on the spine and choil. Steers a lot (as you'd expect) through onions, but gorgeous through fish and meat and even green onions. Food release is pretty amazing too (as you'd expect on a single bevel).
Slight scuffs near the heel (as you see in the photos).
Comes with an oversize handle ebony-purpleheart-rosewood, tapered, and feels better balanced this way (OG handle included though).
230mm edge. 47mm height. HRC 62. 3.5mm spine.
