Hi,

I am selling my Jiro Western handle 240. The knife was used for exactly one test cut (to see the difference vs my 270). The line where handle joins the knife has a fine brown line which was there out of the box (is barely visible). This decreased the retail price by 50 USD, which I also deduct here.


Specs: 245x56 mm, 350g, Ebony handle
Asking price: 700 USD.

From that choil shot, this looks more like a workhorse than his more current offering? What did it feel like during the cut test?
 
the knife is extremely thin behind the edge -- spine is definitely more workhorse. the cut feel is quite special as you feel the texture of the food quite well. I have more experience with my 270, it performs very well.
