I have a 251mm edge length gyuto if you’re still looking and this isn’t too large for you; used in my past as a chef, but has otherwise sat for years. Sharpened, thinned and polished, a re-etch wouldn’t hurt if you wanted the pattern to pop, I didn’t opt for that because I don’t much care for the depth in aesthetics or the effect on cutting. I taken the knocked the handle off in favour of a custom. Would prefer to sell blade only if at all, but would also entertain selling with the handle.

I am open to an offer.
