Keskin 230mm Gyuto. Custom order from Indonesian blacksmith Keskin who does forging and finishing and handles by hand (not kitchen knives ID standard line). SUP9A carbon steel, differentially clay hardened with beautiful hamon line. Custom golden amboyna burl handle with acacia wood saya. Saya pin made of buffalo horn. Absolute laser.

Current condition after some onions

How’s the quality in terms of straightness, and overall F&F on these blades? They appear to be exceptionally well done considering the price.

It's comparable to most mid-high tier Japanese makers IMHO. Rounded choil, spine, no sharp edges. Saya is also beautifully done. Certainly better than most Tanakas!
