Beauty. I am not the guy to ask about cleaning up unfortunately, all my blades look like they've seen things. It needs to cut something, go buy some fish or a rib roast and let the blade have fun.
 
I like the cut of your jib. And this is my latest butcher haul from yesterday:

Steaks, butts, brisket (added a prime costco brisket today), short ribs, ribs and chicken. Got a new grill so needed some software... This knife and those briskets will meet soon enough :)
 
My real knife buying began back in May 2016. I put a temporary halt on my drinking towards the end of 2015 but look forward to returning. So... my knife purchases when drunk equal zero. I suppose I've missed a knife or two because the rational side held me back but overall, I should be happy. The money that I used to spend on alcohol has been diverted towards knives and stones. And that's a good thing, right?
