Selling these 3 great knives to make some room for some upcoming gyutos.

Konosuke SKD 240 Gyuto
Specs: 242 mm x 50 mm
Spine: 4.5 mm (@handle), 3.5 mm (@heel), 2 mm (mid), 0.7 mm (10 mm from tip)
Weight: 152 g

One of the most effortless cutter I have ever used, very good at detail work, wedging is a foreign concept for this knife.

I cleaned up both bevels to be stone ready, clean with minimal low spots and light convexity on both sides.

Comes with special wood saya that looks like a mountainous valley.

Bought it directly from Konosuke for JP¥70000 / $515

Ashi Ginga Yo-gyuto Coke Handle (true 240 length)
Specs: 246 mm x 48 mm
Spine: 2.1 mm (@heel), 1.8 mm (@mid), 1mm (10mm from tip)
Weight: 218 g

Rare coke handle Ashi Ginga in swedish stainless and micarta coke handle.

This one's choil and spine are more polished than usual Ashi Gingas, and it's the harder steel version at 61HRC vs the usual Ashi Ginga 59HRC.

It came with an not-so-ideal large secondary bevels so I thinned it and gave it a convex low wide-bevel and a solid secondary microbevel. It now looks like a sanmai gyuto, with the benefit of a clean, stone-ready bevels, cuts like a good Ashi laser.

Bought it from BluewayJapan for $399.5.

Munetoshi All-rounder White #2
Specs: 196 mm x 52 mm
Spine: 4 mm (@handle), 3.2 mm (@heel), 2 mm (@mid), 1 mm (10 mm from tip)
Weight: 150 g

This knife is pretty much all purpose like it's namesake. If you want to use it for poultry, thicken the edge and it can do that. I you want it to cut carrots and be a good cutter, it can do that too.

Polishing wise though, the bevels came pretty messy out of the box and flattening is quite a pain to do, hence the messy looking bevels on this one. I did thin it the best I can, it's a pretty good cutter, almost laser territory right now.

There is some patina left in a couple low spots, and some scratches on the left side KU.

Bought it from JNS for $170.

Sayas for both the Konosuke and Ashi are included in asking price, Munetoshi has no saya. They all come with their original boxes.

More info,

Cladding on this Konosuke is semi-reactive, that's why you can see some blues on the KU nashiji.

Handle on the Ashi has some scuff on the mirror polished cap from sharpening.

Munetoshi, as mentioned, has uneven bevel issues, I suspect it came with a bent edge. Left bevel doesn't lay flat on the stone right.
