Hey KKF,

I would like to offer up my Simon Krichbaum gyuto that I got direct from the man himself. I received this just a few weeks ago and I have been really impressed with Simon's work. This knife feels very similar to some of my favorite Heldqvists. It has a great mid weight feel to it and Simon did a very impressive job on the polish. The bevels are just primed for jnats and the handle is a take down construction so if you're into polishing this might be your jam. This wasn't a custom so the profile height is just a bit high for me but I will definitely try to grab another from him in the future.
