I mostly used large King 1k soakers at work to sharpen carbon knives & cleavers. For single bevels yanagiba & Deba used 5k Masamoto and later 8K Kitayama.

When retired started teaching sharpening at Culinary school at the time using dirty rotating tri stones kept oil in bottom not cleaned enough. Also they were wailing away on groved steels. From 2013- 2019 went one on one with hundreds of students. Also taught most of the Chef instructors at school.

Changed methods very early to make easier to learn. Also started out with smaller stones. They wore down quickly.

Bought first large Gesshin 1K 2015 it was perfect sharpened all kinds of knives brought
in by students. Used it in speed sharpening demo. with a white steel thick Santoku. Dulled it first of coarse a carbon Santoku can take dull to sharp quickly. Learned that trick in Carter advanced sharpening DVD. Also slowed down demo showing exactly how to. sharpen a knife. With one on one two students at a time this part recorded on smart phones for future reference.

Most sharpened School kit Mercers 8". Used a large coarse S&G for thinning.

The large Gesshin 1K was getting thinner over the years used for all those knives. I noticed Jon had slashed the price on the stone because had large stock & not selling many. So bought another also a large 400 for thinning bevels. This was 2018-19. Still was using the older 1K & beginning with 400 when the World changed. There was no second semester at the school.

All 2020-22 never got sick at all after vaccine got mild symptom after mask mandate. I caught hanging out with kids & their hot rod Mazda Miata's. Got Janice sick. She returned the favor going to Yoga class not wearing mask we both had mild symptoms again. Now we both wear mask out in public.. I even keep gel in the car after going in crowded Costco. We are both in 70's.

Not going to teach anymore no need many who I have taught continued teaching others including. Chef Instructors.
Old & Unused 1K also the 400 started using.

Jon still has quite a few of these they are both excellent large stones. The one K is 120.00 that's a steal at today's rising prices effecting everything.
