Purchased from, [Migoto Cutlery] months ago, technically brand new, only used a few time, less than 20mins total I'd say, only bare denim strop once. Freakishly fantastic knife! Haven't used in a long while. It's hard to let this go. I am selling it for $300USD PayPal and ship included in the US.
Hitachi Gingami #3 forge welded between soft stainless steel by Satoshi Nakagawa. Grinding by the famed Kawakita Hamono.
A collaboration between a highly regarded blacksmith and sharpener, this work features a well balanced convex grind leading to a thin edge with good heel height - making this gyuto is a great all rounder for a wide variety of tasks.
The upper part of the blade is satin finished while the lower end has a hazy finish, creating a simple and timeless aesthetic. Being all stainless, this gyuto is rather easy to care for, while still being capable of taking a very refined edge.
