Today I am selling a knife that I received a while ago as a project that I just finished. The blacksmith is from Quebec and his name is Ludvig Germain. If I am not mistaken, he is also on the forum. Before wanting to tackle this project I wanted to thin the knife behind the edge and give it a little more convexity. I reached the nail flexing edge and now the grind is at zero, ready to putt the final edge before shipping it. Everything was done on stones and now the knife cuts wonderfully well, I am really happy with the geometry!
Then it was time for polishing and I had forgotten how hard and frustrating it really is to polish stainless steel to get a kasumi finish. I won't even divulge the number of hours spent polishing this knife, it's indecent, and finish is still not perfect at all. I did my best to remove as many scratches as possible but in vain, it's not like soft iron. The biggest scratch is shown in the picture below. It's a close up shot but yeah, you can't miss it with the right light. But the finish is still very pleasant to look at and the core steel is really beautiful. The finishing stone for the hagane is a Maruoyama Aisa and uchigumori powder for the cladding.
The handle is awesome and this piece of Turkish walnut have a lot of personality. Everything feels good in hand and the balance point is 2cm after the heel. A small gyuto or a long petty? It's your call! But this little blade can be really handy or perfect for a small working space.
In all honesty, I like this knife and even if it's not perfect I wouldn't mind keeping it for myself. The geometry is now spot on and it gonna take a while before thinking about thinning it. The only problem is that I don't need another knife so I'm putting it up for sale here because there's probably someone who will get more use out of it than me.
