Hello!

Trying to find the differences between two what seem to be identical knives.

They are both Aogami #1 core, non-stainless damascus clad, 330mm sakimaru sujihikis, forged by Satoshi Nakagawa. In pictures they appear identical.

Except the Myojin sharpened one is $1340, and the Kawakita sharpened one is $770 (sorry I cannot post links or photos)

The Kawakita (bernal cutlery) one is under the Hatsukokoro brand, and the Myojin (knifewear) one is "Nakagawa x Myojin"

What gives? Both are considered "master sharpeners".

They are both sujihikis.
Never mind, I didn't go through all the way to the bottom of the page.

Kawakita probably has a lesser Fit and Finish. slightly thicker as well.

Myojin is a better fit and finish and is slightly thinner.

It's not necessarily worse, just a preference. Also, Knifewear markup is pretty high since they need to pay a lot for their employee and His cottage.

Mostly it’s the Knifewear surcharge.

Homebutcher had the Myojin sakimaru for $1200, but regularly runs 30% off codes (and doesn’t charge sales tax 🤐), so using that benchmark, the cost difference is closer to 10%.

Could be. Knifewear is all over the place when it comes to pricing. They’ve had some reasonably priced things from what I’ve been able to cross shop.

The thing holding me back from the Nakagawa right now is I think my use cases for this knife would be better off as stainless.

Guess I need to start looking for a big stainless sujihiki.
