Hi all,

I’ve been into food pretty much all my life. A recent trip to Japan sparked a huge interest in Japanese knives - especially carbon steel. Working on slowly (or not so slowly) growing my collection.

Welcome to the rabbit hole. Unsolicited advice but if you don't know how to sharpen a knife yet, thats the best place to start! A $400 knife will eventually get as dull as a $20 one if you don't sharpen it and no one will take care of your knives as well as you will.
