I am more interested in Japanese knives, but in Germany I grew up with "Dick" knives. Because the company is located right outside my front door. Otherwise, I like for example "Güde".
And I should finally test a knife from , in Germany very famous, Mr. "Jürgen Schanz"... but have so far always bought a Japanese knife at the end, shame on me!

No need for shame. The forum's Germans can point you to artisan-made knives of Germany if you do seek them.
