I have this like new S. Tanaka R2 240 Gyuto for Sale. This is the Harukaze damascus gyuto with the walnut handle. The knife is as new, I took it out and used it to prep dinner at home, decided it was just a bit too much gyuto for me and put it back in its box! This knife is a beast of a cutter, I think these are well known here for their excellent performance, and this one is no exception. I was turned onto the Tanaka R2 damascus from an excellent review of the 210mm version on this forum, if you look into that review it lines up with my thoughts almost exactly. The damascus is stunning, and you can feel it, but it does not seem to negatively affect cutting performance at all. Food release is very good, and cutting feel is effortlessly smooth. This is the taller of Tanakas R2 damascus profiles, it measures 55mm at the heel and it is a true 240mm, I was expecting to receive the much shorter version when I ordered it! I think for many people this profile would be more desirable with the extra height, but I am just not comfortable with a large 240. Fit and finish is also very good on this knife for a Tanaka, they definitely vary and this is the nicest out the three I have purchased. The spine and choil are nice and clean with no rough edges like some these have. I have decided I may be better off trying to trade for the specific profile I want, if you want to purchase let me know! Price is $400 shipped.
