First off is an Ikeda 210mm gyuto in shiro2. This is one of the first Japanese knives I bought and is used but well loved. Bought from Bernal and the free first sharpening coupon is still in the box.

Next two are both by Tanaka via Sakai Kikumori. The gokujyo is the first Tanaka knife I bought and it is one of the best cutters I’ve ever used and I love it. The problem? I love his AS more so this needs a better home. This one has a new 3DP handle installed. Steel is shiro 2.
