Hi Folks

I have this wonderful knife i picked up from knifewear a while back, and i've been doing some pretty heavy julienning at work. Lo and behold, the side of it is rough, and is shredding my guide fingers like the worlds worst cheese grater. Does anyone have experience polishing up the side of this type of finish so it won't scratch me as much? Ideally i'd like to keep the appearance the same, which i know complicates things slightly. Also, i might want to slightly round the spine

Try 0000 steel wool. It's not very abrasive but will smooth out the surface.
