Hello everyone, I have this Nakagawa Blue 1 Damascus gyuto that I am putting up for sale. I acquired this one by trade recently and it’s an awesome piece. As I’ve tried more knives from different makers and in different steels I’ve kind of narrowed down exactly what my preferences are. This is 95% of the way there for me but it’s not exactly perfect, this was my first Nakagawa and my first B1 knife. This one kind of told me everything I need to know about Nakagawa b1, takes an incredible edge easily and has tons of bite. This one has a fantastic convex middle weight grind that gets very thin bte, super smooth cutting feel. Knife has only been touched up once on an SG3000 and has seen very light use since. It has developed an incredible patina from slicing hot steak and pork shoulder. Handle is mono oak. Asking $375 $360 shipped. Would not be sad to keep this one, but there is something I would really love to pick up!
