A few years ago I overpaid for this Schroeder Gyuto/sujihiki. I held on to it because it’s basically a very nice knife made by Isaiah Schroeder. It’s seen a fair amount of use, probably in a commercial kitchen, which accounts for its relatively rough exterior. It’s been sharpened to a definite right hand bias. The tip is rounded but not bent. It sharpens up beautifully. I kept it because it’s a perfect project knife for me as all the defects are basically cosmetic. That said it’s a perfectly usable and competent daily user in its present form. Rather than put the effort into cleaning it up I thought I would put it on BST at a realistic price of $195 shipped and insured to the USA and international. A Canadian buyer can have it for a bit less because I save on shipping and PayPal.
