Selling my Shigefusa 165 mm KU santoku, I put a Taihei octagonal ho wood handle on it. I've used this knife a decent amount, only sharpened it a few times, never thinned but I did polish it up to the original look, mirror core with a contrasty cladding. Unfortunately the left side of the blade has a couple of small pitting points, you'll see them in the pictures, these don't effect performance, and they are quite small. I think the grind on this one is pretty typical of Shig KU's, it's great for garlic, herbs, shallots, things like that, it will wedge a little bit if you cut a carrot in half with it, not horrendously so. It's also a very good little butchery knife. The KU is of course top notch, there's some nice banding, and the blade feels very nice to hold. I burned the handle on, it's a perfectly aligned friction fit right now, which is great for maintaining the blade down the line. After burning it on I sanded and polished the handle so that the horn and the wood are flush. In the pictures, the handle is not fully on, it goes on a little bit further with a little more force, and then it will stay in place on its own. I'm leaving this up to whoever buys it, my preference would be to leave it friction fit and seal it with beeswax, but if the buyer wants it glued on, I'll happily so so. There are a couple of small finger marks on the blade, I'll clean these off before sending it off. Please see the measurements below:
Blade Length: 170 mm
Height at the Heel: 49.5 mm
Spine Width at the Handle: 7 mm
Spine Width at the Heel: 4 mm
Spine Width 1/2 Way Down: 2.5 mm
Weight: 179 g
Selling for $350 + shipping, I'm based in Australia, from experience shipping to the US/Europe should cost between $40 - $80. Prices are in USD.
I also have a Shig KU 165 mm OEM nakiri up for sale, if anyone wants to buy both this and the nakiri, I'll knock $50 off the total price, so $650 for both knives.
