Hi KKF,

It's been a big Summer of acquiring stuff, and it's time to clear the shelves a bit now that i've honed in on the specific niches I personally prefer.

I have really enjoyed every single one of the knives in this WTS, but for my sanity i'm trying to move to a place where I have as little overlap as is still enjoyable, plus i'd like to invest some of the proceeds into an additional one or two Jnats.

I'd prefer straight cash but will consider trades for fine finisher Jnats, or any knives i've put a WTB out for recently (or similar). I really want to clear some space here, and so to be transparent, i'll prioritise sales that bundle more than one knife together. Outside of that, i'll go by first come first served.


The Knives:


SOLD: £300 - Simon Maillet Spicy white 26C3 & Wrought 175 Bunka:
  • 150g
  • 50mm heel height
  • 175mm edge length

Notes:
  • Bit of an impulse buy, especially considering i’m on his books for a custom soon and I am already covered for this size and profile.
  • Nice steel, very nice wrought cladding - it cuts great but is also going to be a lot of fun for the polishing nerds and anyone who likes a vivid blue patina.
  • Genuinely stone ready bevels. I could put it straight on my Narutaki Suita from stock.
  • The knife was quite warped when it arrived, but I have corrected this after quite a bit of incremental tweaking and it’s now straight and true.
  • Sharpened very lightly once and currently has a natural stone edge on for some refined toothiness. Polished on naturals to refresh the patina and bring out the details in the cladding - will be shipped without a patina to be clear.
  • Hard to guess whether there will be big demand for this or not, but if there is, you’ll have priority if you bundle with another knife.

Sold: £350 - BNIB Migoto Tanaka B#1 270 (New old stock):

Notes:
  • Sharpened by Nomura.
  • I bought this directly from Lee a few months ago as new old stock. He said that he’s not going to be restocking this line, so if you were hoping to get hold of one this may be your last chance to get one BNIB.
  • I already own and love one of these knives, and bought this one to give to my Dad, who was very enamoured with my own copy when he came to visit. He was very grateful, but a bit apprehensive to use a fully reactive knife, and I don’t need two.
  • There are a few cosmetic imperfections which i’ve captured pictures of in the most unflattering light. Let me know if you have any more questions and i’ll be happy to answer.
  • Lee gave me a great price which i’m happy to pass on, but i’d be annoyed to see this getting flipped with a healthy markup in a couple of months due to scarcity, so if you want it, you’re going to have to buy something else from this list too please.

Sold: £400 - Nakagawa x Myojin B#1 240:
  • 185g
  • 50mm heel height
  • 227mm edge length
Notes:
  • Again, also used for only about 3 meal preps - I personally felt this had too much crossover with the Tetsujin and TxK for me as I only really want one ‘middleweight/laser’ style knife, however this was my favourite cutter of the three.
  • There’s a ding where the bottom side of the neck meets the handle that was there when I bought it. Doesn’t affect function in any way.
  • This knife came with a pretty ugly (in my opinion!) stock handle, so I fitted a custom rosewood and horn from Let’s Handle This that cost me way more than i’ll be able to recoup from the sale, so i’ll be rehandling this with a slightly cheaper but still pretty nice wenge and horn handle later this week (pictured for ref).

Sold: £350 - Tetsujin Kasumi B#2 240:
  • 195g
  • 50mm heel height
  • 231mm edge length
Notes:
  • Used for about 3 meal preps - these knives are quite reactive at first so I christened it with a large ribeye to get a solid patina established.
  • Still has factory edge - never sharpened, never stropped.
  • No flaws to note.
  • Has one of the nice Taihei handles.

Traded: £410 - Tanaka AS 240 (Zahocho):
  • 200g
  • 50mm heel height
  • 231mm edge length
Notes:
  • This came with a horrible concave grind that by Fred’s own admission was really not very good. The knife was thick behind the edge, the shinogi shoulders were way too large and pronounced, and it would wedge in onions. I think this line is semi forum famous now for how much misery it has caused members (@jedy617 @tostadas ).
  • I had the bevels professionally thinned and convexed at Kataba in London, and then spent a significant number of hours fine tuning and refining the bevels to remove most of the belt scratches and apply a Jnat polish. There are still some very minor scratches in areas, but they will work themselves out with progressive maintenance thinning over time.
  • I am pleased to have largely maintained the knife’s original height whilst significantly improving performance and ease of maintenance. The current grind/feel on this knife is robust and confident, but it can actually cut now. It’s somewhat similar in feel to the Migoto 240mm W#1.
  • This week I will be finishing this project by rounding the spine and choil, refreshing the polish, and waxing the handle. I will provide shots of the final product before the buyer commits if preferred.
  • To reiterate: this is a Yoshikazu Tanaka knife in his legendary AS steel, with properly stone finished bevels that are plug and play for future thinning and polishing. No brainer!

  • 169g
  • 50mm heel height
  • 230mm edge length
Notes:
  • Used for less than 5 meal preps.
  • Touched up once on a 3k as the ootb edge was average. It’s now screaming and ready to use.
  • No flaws to note.
  • Has a nice Taihei handle.

Sold: £210 - Tanaka W#1 Suminagashi 210:
  • 162g
  • 51mm heel height
  • 204mm edge length
Notes:
  • I bought this from Kitchen Provisions late last year and have used it often but lovingly and with care since then.
  • Sharpened twice with a few touch ups on 4k in between. Never thinned. It has a light patina currently which I can remove if desired.
  • Tanaka’s treatment of W#1 in this knife changed my perspective on white steels. It’s super crispy - being quick and easy to sharpen and taking a ripping edge as you would expect - but edge retention is excellent too with a robust feel that’s not at all chippy.
  • Mystery sharpener but the grind is very good and tows the line between feeling robust and rigid but not at all wedgey - don’t be mistaken, this knife is thin bte. F+F isn’t quite up there with the usual Kono and Hitohira offerings, but the price reflects that and it’s still a great performer.

The TxK is surprisingly light for its grind at ~170g. It is really thin….?

I am of the understanding that they used to have a thicker grind and were more middleweight, but the more contemporary versions are thinner and lighter. The modern ones I have used were very thin indeed.
 
Tanaka W#1 and AS are off to new homes - just the Simon Maillet and Nakagawa x Myojin left.
