Skye Eilers 212x53mm French Chef Gyuto
AEB-L
Micara & G10 Handle

Got this french chef profile from the preorder last year. Used twice, never sharpened (it was crazy sharp out of the box). Letting it go because I prefer a less aggressive profile at the tip for my gyutos.

This is an extremely refined production knife. Features a full convex 50/50 grind (see video below for convexity), coke bottle shaped western handle, rounded spine, and generous knuckle clearance at the handle. The profile is a smooth continuous curve, leveling out toward the heel with no dead flat spots. It features a medium thickness convex grind with good food release. Though the tip is narrow, the knife does not feel delicate in use. Thin behind the edge, but not a laser like an Ashi. Slight forward balance is a nice design touch for a western handled knife with full tang. The micarta handle is smooth, providing a bit of texture, and all pins/tang are ground flush.

$295 shipped & fully insured within US (international PM for details)
It did not come with a separate box, but it will be packed up tightly for shipping.

Dimensions
Blade length: 212mm
Height at Heel: 53mm
Weight: 180g
Balance: 5mm forward from heel

Spine Thickness
Handle: 3.0mm
Heel: 3.0mm
Midpoint: 2.3mm
1cm from Tip: 0.8mm

Even though it didn't match your tip preferences, I really appreciate the kind, flattering and detailed review mate! I'm glad you got it shifted quickly 👌
