Birgersson 240 Warikomi Gyuto:
LNIB. A rare example of a full sized Birgersson with less heel height. Still plenty of knuckle room, but not crazy tall like many of his blades. I am the first owner on this one, and only used it for a few test cuts. Bjorn's warikomi definitely lives up to its name - the edge is scary sharp. Unfortunately, the low shinogi just isn't for me.

Birch and Bevel Classic Wrought Gyuto by Isasmedjan: SOLD
A wrought clad Apex Ultra beauty from Isasmedjan, under the Birch and Bevel brand. This knife had a few owners before me. The first owner thinned it out of the box to improve the performance, and I gotta hand it to them, this thing cuts incredibly well. Tough enough to feel authoritative, but thin enough for horizontal slices and precise tip work. Really nice handle on this one too, but I just have too many redundant knives at this point, so I'm reluctantly moving it along. If you haven't tried apex ultra steel, it really is a joy to use.
