I have a barely used almost new HSC/// MagnaCut Monobeam 230x58.5mm Gyuto for sale. High bevel, thin behind the edge, very aggressive distal taper, parallel finish tip to heel. It is a Workhorse, very kinetic feel nimble in the hand. Almost no food striction. MagnaCut has very durable edge retention. It has been stropped once with Diamond Poly. This is a crazy productive knife capable of any task. Fit Finish first class Harbeer is a very prescriptive knife maker and a nice guy to work with.
