It’s been a few years since I got my knives. A Yoshikane (forgot which steel, think it was half stainless) and a Makoto Sakura Bunka (SG2). They’ve served me really well but I’m itching for a new 210mm carbon gyuto now. Looking to introduce myself and start asking for recommendations haha.


Any recommendations under $400? Are knives from Knives & Stones still the go to recommendation? Any new makers I should take notice?
Please let me know which carbon (or stainless) options you guys recommend :) Thanks!

We have a few good stores around that will ship to you pronto. I recommend beginning with Cook's Edge, Sharp Knife Shop, and Tosho Knife Arts. Internationally, KNS Australia ain't going to rip a limb off. Good stuff to browse there.
