Hi all.

Anyone here knows how the Sugimoto HM Carbon steel gyuto compares to the Misono Swedish carbon(the one with the dragon)

I have a thing for western handled monosteel carbon. And the Sugimoto looks nice. It's also a lot more expensive where I live then the misono.

Is it worth almost doble the price of the misono?

I looked into monosteel carbon too and found most options pretty expensive to import plus steels are often unspecified.
Masamoto hc/ct etc.
I actually consider a custom 52100 or so made in the eu.

If you want off the shelf: What about suien vc?

this is going to be more like 300$ once it is in the eu but it also is solid blue2 steel.
Sakai takayuki aoniko is another option. Also solid blue steel.

Not sure you can still get masahiro vc for reasonable prices.

You can save big time if you are ok with SK steels. Lots of options within the EU.
I actually like the steel for a good allrounder. Edge retention isnt amazing but neither are those of most white steels or other simple carbons.
