SOLD Suisin Hayate 300mm Yanagi numbered limited edition forged by Keijiro Doi !!! Very Rare

This one is really meant for serious knife people. Keijiro Doi did a final series before he retired in 2013 and his son took over. This is part of that final series, Hayate is "Cold Forged" meaning he forged the metal at the lowest temp possible for the highest quality steel. This knife was a limited run of 155 total, this is engraved on the blade as number 135. The knife is lightly used by me, but kept in excellent shape. Probably the sharpest knife that I own, amazing knife to use, with an absolutely legendary story behind it. If you are like me and love rare knives that are exceptional, this one is for you. I have retired from being a chef, so would love to find this baby a new home.
Because of the limited release and legendary name behind this knife, the price is $2500.

It was quite a few years ago, I got it in 2012 when I cooked a dinner at the Beard House in NYC, so 11 years ago. I can honestly say I don't know how much I payed for it, my guess would be around 2k.

Nice. Certainly a unique piece, being a lefty always excludes me from these gems.
