Tanaka Blue #2 nashiji gyuto US edition. Eff'ing beautiful handle James put on these US edition knives. I received it yesterday, cut an onion (so it has a smidge of amber patina spots), liked it but didn't love it, same way I felt about the ginsan 210. ($216)

Wakui white #2 hairline gyuto. Epic Edge version, have had it since April or May, used a handful of times, still spotless aside from the mustard patina I put on the edge (can remove). I enjoy this knife, and it might be the most well balanced 210mm I've used, but just don't use it much. Easily my favorite budget knife maker. ($140)

SOLD Masashi SLD mini gyuto. You want to murder herbs/shallots/garlic/small fruit/cut sliders in half for no reason? This is the one. Great cutter but since getting my munetoshi petty I haven't touched this. It has some scuffing near the edge as this was one of my first knives I put to stones. 1 sharpening and 1 or 2 touch ups on 5k. comes with knifewear edge guard ($130) SOLD
