This thing is like a scalpel. Unfortunately falling in-between preferences for me with the weight/length combo. Every example from Bazes I've tried has been awesome and this one is no different. Wild how much he is doing with the grind on a knife this thin. Check out the potato video from the previous bst! - Bought on bst here

Picked this up directly from Alex a while ago. Super fun knife. His stuff is very well done and lasers through food. Was hoping with the fancy handle and semi stain resistant blade my wife might adopt this one. She did for a minute, then I finally convinced her to try the Morihei Hisamoto Fine Finish 180 and she promptly sent in her TF fan club dues! Pure cutting performance is close between the two, but TF had more weight and forward balance.

Grabbed this around Christmas time after being blown away by the 240. I also picked up a 180 recently and am liking the 240/180 combo and finding the 210 is being left to sit there and look mean! All 3 examples of my Fine Finish knives have out cut my old Denka and Mab. If you want to know what the TF hype is about, buy this knife, or any fine finish knife! This one has nice forward balance even with the western handle and bolster. It did come with some of the reddish dust/rust in the kanji that seems to occur with TF blades. I’ve kept it well oiled and haven’t seen any growth or change in that since. I tried to wash all the oil off for pictures so you can see what I’m talking about. Last photo is a pic of the blade with mineral oil, but wiped down with a paper towel. I don’t think this is causing any issue with the blade, but wanted to call it out. No blade wabi-sabi and the handle is pretty well done for a TF. Might not go all the way to Fine Fit and Finish, but fine finish for sure all day long. - TF FIne Finish ProTooling
