my wife loves them. I woke up, did my thing, and got hungry. I noticed a package of Taiwanese Milk Bread that my wife bought.
I thought...EGG SANDWICH. I asked my wife and she was totally on board.
first time eating a legit version was in Taipei. it was great. grabbed it from a stand and kept walking and eating...then I flew to Tokyo, and I did the same thing. The Japanese version was SO GOOD. they really get the particles tiny. I discovered they sieve the egg salad into a puffy cloud of egg delishsousness. I'm lazy, and I am alway pressed for time.
so what do I do? I ram the eggs thru my potato ricer!! I get a smooth egg salad. not cloud smooth, but smooth enough for my kitchen.
My cheat is a potato ricer with the smallest opening plate installed.
