i use my 330mm suji for brisket/prime rib. it's so worth it. good luck. i tried to get nakagawa to make me a 330mm b1 damascus sakimaru suji but it didn't work out.

if someone offered you any of the other steels in the 330 suiboku, would you take it? or only ginsan?

Yeah I guess i would consider another steel. I only recently went stainless as I'm so busy now, even so busy to wipe my knives carefully. I routinely have to stop what I'm doing unannounced during lots of heavy prep and it was beginning to affect my carbon stuff - mind you that was with my daily drivers (petty, gyuto). A 330mm suji would only be for specific applications and I suppose I could manage setting time aside for the task to be completed uninterrupted - in which case, considering another steel might be ok...
What would it take to pry the 330mm out of your hands?

i've never actually seen a 330mm suiboku sujihiki, but i know nakagawa makes lots of longer slicer options, so i can see it being around somewhere. fingers crossed.

i got that knife for under $1,300 USD because there was a sale going on, and it had some light scratches on the blade. such a steal haha.

homebutcher tends to have a decent selection of sakimaru sujihikis, or sujihikis in general. i guess he takes time to source them since BBQ is his thing.

i'll look out for a 330 suiboku and send them your way if i find one.
