Hi all! I have a couple nice knifes up today that aren't perfect fits for me so after after a lot of contemplating I've decided to let them go to someone who will use them more than me. I'm looking to trade them mainly but will sell them if I can't find anything that peaks my interest. Right now I'd like to keep this is the States.
First up is a Gyuto from Yanick Puig its wrought clad 135cr3 240mm x 58 mm and weighs 220 g and I believe the handle is Rosewood but I'm not positive. Super gorgeous knife but I found that it's a little to tall for what I prefer. The trade/sell value is what I paid $1100
Next up is a a San mai Comet it also happens to be the first San mai billet that Trey ever made which is pretty cool. It originally got sold as a second because of some carbon migration that happened during the forging process. It was used in a professional kitchen for a couple years by a previous owner who didn't have an issues amd I've owned it for a few months and haven't had any issues. When I got it it needed some thinning and a tune up so I i sent it to a good friend of mine and he brought it back to life. It's 210mm x 51mm and weight 200 g it's W2 steel with 1018 cladding. The handle is a really cool piece of Tasmanian blackwood. Trade/sell value is what I have in the knife $590 (I paid $550 and spent $40 for the spa treatment)
Treys original posts:
Trade wise I'm looking for the following
The Nine (Roman numeral preferred)
A yanick that shorter with a smaller heel height
Tsourkan
Halcyon
Comet
I'm open to others as well.
Thanks for looking amd I hope you all are having a great day
-Joe
