    Tamahagane

I wanted one of those zubeng forge tamahagane knives 10yrs ago but couldn't ever find one for sale second hand.

    ☕️ Coffee!

Everything needed to make coffee at work. I like all coffee: bad coffee, good coffee - its all got a time and place.

unpopular opinion knife rolls/bags are a complete scam

I definitely wouldn't trade my knife bag for a drum stick bag. Basic mercer bag or chefsac will have space for everything you need to take to work that isn't a knife.

    Aogami Super

Just don't get shibata AS, no edge retention at all. Old takedas had decent retention. AS seemed to get a razor sharp edge which was lost pretty quickly, then it'd hold a decent edge forever - a ceramic rod doesn't do much for it either.

what do you guys use for pocket knives?

It's a knockoff, probably the only sane way to buy an OTF like the boba fett microtech due to the second hand markup.

Do You Use Your "Expensive" Knives?

The price doesn't change whether or not I use a knife. Its intended purpose and ease of use is what does it for me. If its a gyuto I expect them all to do certain things in the kitchen to justify me bringing them to work: shave chives, cut through parsnips without wedging, work well enough on...

    Handles: What's Your Favorite Wood?

I really enjoy the feel of tamarind once cured, it likes to split on me though - only reason it's not my favorite.

    Handles: What's Your Favorite Wood?

Whiskey barrel oak or American cherry are my 2 favorite handle woods right now. Both take a walnut or linseed curing oil very well, rarely need reapplying, dense and grippy. Not a wood but corian is up there for me, as long as it's not taken to a polish it is very grippy.

Famous cooks, chefs, and their knives

Most celebrity chefs a cmc's I've known have that one pretty knife for pics (anger, monolith, Mr itou) and then use glestain, global, or big ol German knives. A lot of the old school ones I knew would just use a cheapo serrated knife for everything (sliced scallions to breaking down whole...

what are you shooting? (handgun thread)

Haven't had a chance to shoot either yet but I'm sure they will both be fun.

    Flipper alert

This is my general sentiment, charge whatever you want for your property. If someone wants to pay that price then great if not then you're priced out of the market. Time seems to be the determining factor on whether or not you're called a flipper. I don't ever try to make a profit off of my...
