Join me on my journey of turning a small santoku into a smaller nakiri. Work is very busy and I’m having a blast playing with new toys. Idk what it is about this handle but it feels great. I’d love a paring knife with this handle as it feels so natural in the grip. Sick patina too

Good steel. On the coarser side of things, but takes an aggressive edge from 3k diamond. Not high alloy aggressive, but that stainless chromium aggression. Softer steel but not too gummy, more well balanced goodish coarse steel. Somewhat resembles skd? If I had to guess feels maybe 57-58 hrc.Very thin and floppy knife. Tang is rusted somehow despite being a stainless steel. Not a bad knife, wouldn't mind using this as a regular knife compared to j knives. Cuts through potatoes well

Masakane (?) Yanagiba
The Kane in a circle ive only seen on masakane knives, I would swear it was trademarked back then ..

Recurves and low spots and wavy shinogi and pitting

Steel is awesome, not masakane like at all
A lot like the super hard steel Sakai vintage blacksmith I've sharpened but finer stickiness into hair. Maybe white 1? Competitive with unshu yukimitsu. Yukimitsu is more buttery and springy. This one abrades like Play-Doh kinda . . . I guess finer particle feel? Doesn't feel quite like swedish steels I've tried. Not Sakai made, the sharpening is too different.

I’m actually on some copium. First time knowingly buying a right handed knife. Y’all have so much more fun stuff available to you, looking at you single bevels 👀.

Although the fullers are on the right face, I thought maybe the convexity would be even. It seems to be ever-so-slightly more acute/less pronounced on the left/flat side without the fullers. Can definitely be used by either hand but I probably will trade/pass this one along.

But mannnnn the handle and tang junction are so nice on any Bidinger I’ve held. Luxury sports car comes to mind.
