Looking for a larger nakiri, perhaps 180mm?

I'm very happy with my Watanabe 180mm nakiri. watanabe blades Perfect size and great aogami steel, heat treatment, grind etc. One of the best cutters I own. It has a KU finish, never had any problems with rust. Just a bit of nice blue patina at the cutting edge. Toyama has about the same one...

You can only keep 3 knives

Here’s my pick. First I’ll take a beast, a Toyama 270mm gyuto or Mizuno 230mm cleaver. You all know Toyama, so I take Mizuno. It’s kind of a fusion East meets West blade. Produced in Japan, then I got inspired by a tuning project from Mario Ingoglia from the USA and then let the custom job do by...

Difference between high carbon and carbon steel knives?

True! Maybe this can help in your thougts. I wouldn't be that focused on the type of steel. An important choice is if you want stainless or not. After that, the maker and his forging, heat treatment, profile, grind, sharpening are more important for the performance of the knife. And like others...

    Knife tuning in the Netherlands?

So, my knife returned from Jürgen, and I’m very happy with the results! The cutting performance is much better now. With a thin edge (for a cleaver) and a distal taper from about 4mm heel to a 1mm tip. The new finger guard gives the freedom of moving my grip more forward. So you get more balance...

    Knife tuning in the Netherlands?

Forgot to say - just saw you live in Germany. If you don’t know it already, I would check out the kochmalscharf.de website for local experts. There are quite some (hobby) knife makers. Maybe they can help you out. Don’t have to speak English over there 😀 Grusse und wiedersehen Rolf

    Knife tuning in the Netherlands?

Yes I just got feedback from Jürgen: he will do the job. First add the finger rest and do some thinning. Maybe after that, he can improve the distal taper, but that's a more complex and bigger job for a cleaver. Sharpening will be no problem for him I guess, that's part of the daily job. But...

Customs taxes for imports from USA?

For some reason my parcels from Japan also aren't noticed by customs (until now..). And they arrive very fast - like two days. It's strange, but I'm happy.

Customs taxes for imports from USA?

Same here in the Netherlands. I usually calculate about +30% of the price when importing outside the EU (VAT tax+ imports tax). So it's not many times worth buying things far away... To prevent these taxes we have to lower the value to about €20. That's a risk with this kind of low insurance...
