The maker is masutani. Fantastic knives for the price. I gifted one to my mother for her birthday last year. They make knives in the smaller size range, great for home cooks and smaller apartment kitchens. They are ground nice and thin so they can chip pretty easily if misused.
Not tamahagane but kagekiyo white 2 honyaki would at least cover two of those.
Takada honyaki is really special as well. They keep escaping me everytime I try to get my hands on one.
Took another shot at the diagonal finish on the hira last night. I'm happier with the results this time. I pretty much changed what I pointed out in my OP.

Ehh this is within my expectations when it has such tall bevels and kurouchi. It is exceedingly difficult to get sharp and straight lines on that style of grinding.
Do you have any harder or less muddy stones you can include in your progression? The muddy coarse-medium stones like jns 300, morihei 500, and arashiyama 1k leave a very nice even finish but might be hiding some of the inconsistency in your bevels. This is perhaps why things feel like they are...
