    I’m wondering who really treats white #1 the best, or a few makers that do so. I’m looking for something like a Mazaki gyuto but in #1, or maybe a weighty wide bevel in #1. Really looking for a proper heat treatment though. There are so many manufacturers now I can’t keep up.

    Yo to Wa handle

    Anyone doing this for a reasonable price these days. I have 2 Hiromoto Shiro #2 that I would like to take from there Yo handles to Wa handles. I would do it myself but I have no shop anymore and no free time. They are a 240 and a 270 and I love them both, but the Yo handle just doesn’t feel right.
