    Best 'softest' type of cutting board wood for the knife ?

    Heya guys, I am currently looking at larchwood board, but it looks like maple and walnut are softer than larch (according to Janka hardness test https://en.wikipedia.org/wiki/Janka_hardness_test ), but I have heard lots of good things about the Larch board. Anybody have any experience or wisdom...

    Do you have beater knife/s ?

    Do you guys use beater knife for those menial tasks? I still have a block of my old Ginsu Chikara (best affordable consumer report 2004 set !!) that I still use to cut up vegetables scrapes for the compost bin.

    Where to get Yoshikane cutlery ?
