    Do I need a nakari ?

    my nakiri used to be my go-to.... now that my skills and my collection have grown, as a home chef, I find myself reaching for my 210 gyutos much more frequently- the shig is still a pleasure to play with, though.... +1 for nakiri.

    Been lurking for a few months, have purchased an unfortunate amount of knives for my wallet-- even 2 on the forums. Glad to be here and hoping to learn a great deal more about using and sharpening japanese knives!
